      12 = excellent
      GRAIN = internal loaf appearance (grain), 0-12, 0 =
      unacceptable, 12 = excellent
      TEXT = loaf internal texture (response to touch), 0 =
      unacceptable, 12 = excellent
 BRO - amount of potassium bromate added to the bake formula (%)
 ABS - loaf absorption (%); amount of water added to loaf for
