Production of Brewing Barley and Research in the L'viv Region

Among grain crops, for sowing areas and gross harvesting grain, barley takes the forth place, but it takes the second place after wheat in Ukraine. A powerful region of spring barley growing is the Western part of Ukraine where its sowing area makes up approximately 0.5 mln. ha and grain yield of 3.1 t/ha (Table 1).

According to data of Czech researchers, satisfactory conditions for formation of high class brewing barley must meet such demands: mean air temperature -8.5C, precipitation - 560-600 mm, sum active temperature 1700-2200C, altitude 200-300m.

Similar conditions have been composed in L'viv Region which are preferable for growing spring barley for brewing purposes. Spring barley is sown here on 65-70 thousand hectares and about 7-8 percent of gross production of grain is used for beer production.

In the town of L'viv as historical materials testify, the first mention on brewing shops dates back to 1425. The first brewery was built on the territory of L'viv factory in 1715. This date is considered to be the year of the foundation of the plant.

It should be noted, that such indices state of standards for brewing barley are accepted as follows: moisture of grain, capacity to germinate on the fifth day, coarceness of grain. However, in brewing industry the raw material will meet not only these requirements, which are mentioned above, but also satisfy brewer's in content of protein, starch and extractive matter. These indices are of special interest for brewing industry. Agricultural science and practice determined considerable effect on formation of brewing property of grain. The following factors such as cultivar, forecrop, sowing time and sowing rate, rate and time of application of fertilizers particularly of nitrogen, undersowing of legume grass, harvesting time, etc. should be taken into consideration. Apart from growing technology of brewing barley its location and storage in the best soil-climatic zones must be predicted.

It should be taken into consideration that for soil-climatic conditions L'viv's area is extraordinary variegated region. Here, such nature zones as: Polissa, which occupies 27% of the present territory of L'viv's region, western Forest and Steppe zones 37%, Peredkarpatya - 16% and the Carpathians - 20%, respectively.

Every zone has its peculiarity and thus effects the formation of indices which determine quality of brewing raw materials. Study of this question by the Institute of Agriculture and Animal Husbandry of Western Region of Ukraine together with L'viv's brewery showed that the most valuable is the grain for brewing usage containing 9.6-10.2% of protein, 57.1-60.1% of starch and 9.6-10.2% of filmininess. It is formed under the conditions of Forest and Steppe zone on chornozems and dark grey soils and Polissya on dernovo-carbonatic soils. The grain of barley grown on dernovo-podzolic soils of Polissya and dernovo-podzolic surface clau soils of Peredkarpattya contains less starch (53.0-55.0%) but more protein. It differs in bigger content of undesirable brewing barley fraction of protein (leicozyn + edystyn) and worse technological indices of malting (less content of extractive matter and bigger hardness of malting). This grain was less applicable for brewer's usage.

In the technology growing of spring barley for brewer's usage, important meaning has cultivar which for brewing indices must meet requirements of brewing industry.

Proceeded from soil-climatic peculiarity of Western Region of Ukarine, as the zone most favorable for growing brewing barley, in the breeding program of the Institute of Agriculture and Animal Husbandry of Western Region of Ukraine the primary significance has been given to creating varieties of spring barley with high productivity of grain, resistance to powdery mildew and excellent brewer's qualities. Based on the several years work a new cultivar of spring barley Nadiya, which is considered to be perspective for L'viv area was created. Newcreatic cultivar of spring barely Nadiya exceeds the standard Roland cultivar for productivity of grain by 0.6 - 0.7 t/ha, resistant to diseases and brewer's properties (individual brewer's value cv. Nadiya is 80 units, standard cv. Roland is 68).
