Title
Relationship between composition of high-molecular-weight glutenin subunits and breadmaking quality

Abstract
The relationship between the composition of high molecular weight glutenin subunits (HMW-GS) and breadmaking quality in 163 wheat cultivars from 9 major wheat growing areas (Beijing, Hebei, Henan, Shandong, Shanxi, Shaanxi, Jiangsu, Anhui and Sichuan) in China, as well as in 11 wheat cultivars introduced from abroad was determined using SDS-PAGE. A total of 18 subunits were observed, including rare subunits such as 7, 20, 21 and 2 + 10. Cultivars with subunits 1, 13 + 16, 14 + 15, 17 + 18 and 5 + 10, and subunit quality score of 3 or 4 recorded the best breadmaking quality. On the contrary, cultivars with subunit 7 + 8 and subunit quality score 3 recorded inferior breadmaking quality, and low sedimentation value and GMP content. Cultivars with subunit 2* possessed low total glutenin content and sedimentation value. A total of 38 types of HMW-GS composition were recorded. Polymorphism in HMW-GS composition increased with increasing quality score. HMW-GS content and composition, as well as quality score of cultivars with subunits 1, 7 + 8 and 4 + 12 were higher than those with subunit composition 1, 7 + 8 and 2 + 12
