Abstract
The relationships among protein fractions, Wx protein and noodle quality were studied in 20 wheat cultivars from Shandong Province, China. The correlation between the protein fractions by 1-propanol isolation method and noodle scores was significant. The correlation between SDS-glutenin macropolymer (SDS-GMP) and noodle quality was highly significant. The noodle quality was highly significantly and negatively correlated with the absolute content of Wx protein. Further, the multiple reduced regression equation for noodle quality according to SDS-GMP and WxA1+WxB1+WxD1 was established ( r =0.84). SDS-GMP and WxA1+WxB1+WxD1 content can be used as indexes in the selection of noodle wheat cultivars
