Abstract
Laboratory experiments were conducted to determine the glutenin subunit pattern, as well as the bread and chapatti making quality of wheat cultivars PBN-51, Lok-1 and PBNS-1666-1. The glutenin subunit patterns of PBN-51, Lok-1 and PBNS-1666-1 were 2*, 7 + 9, 2 + 12; 2*, 17 + 18, 2 + 12 and 2*, 17 + 18, 5 + 10, respectively, with PBNS-1666-1 recording the highest quality score of 10. PBNS-1666-1 recorded the best overall quality for bread and chapatti making, the highest loaf volume of bread (450 CC), and highest values for organoleptic traits of chapatti such as texture (7.87), colour (7.81), flavour (7.56), softness (8.37) and taste (8.62),
