Abstract
The effects of NO3--N, NH4+-N and urea (NH2-N) on leaf N metabolism and protein content of wheat cultivars Yumai34 (strong gluten), Yumai49 (medium gluten) and Yumai50 (weak gluten) were studied in a pot experiment. The application of urea to Yumai34 increased NR (nitrate reductase) activity in leaves at the flowering stage, N content, glutenin/gliadin ratio, processing quality and nutritive value, and resulted in the highest grain protein and albumin contents in this cultivar. The grain protein content, albumin content and glutenin/gliadin ratio of Yumai49 were highest with NH4+; this treatment also enhanced the processing quality and nutritive value of this cultivar. Yumai50 recorded the lowest grain protein content, albumin content and glutenin/gliadin ratio, but showed good processing quality when treated with NH4+. Grain protein content was closely related to the N content of leaves at the flowering stage but not to NR activity
